Easy Four Ingredient Whole30-Approved Snack


I'm a whole SIX DAYS into my second attempt at the Whole30 diet and the cravings are real. All I want is cheese and ice cream and chocolate and croissants but I'm determined and staying strong this time. While my meal prepping game might not be on point, I do enjoy planning out different meals and snacks to keep this diet somewhat interesting.
While I can't have ice cream, that doesn't mean I can't have dessert. This week, I took a twist on the classic peanut butter and banana snack to make it Whole30 approved, and I couldn't help but share. The best part? There are only FOUR ingredients. All of the ingredients are Whole30 approved, which is awesome to me because there is so much that this diet restricts.

Ingredients:

  1. Ripe Bananas
  2. Almond Butter
  3. Ground Cinnamon
  4. Pistachios

Instructions:

  1. Make sure there is room in your freezer. This was a very tough step for me as I have stocked up on frozen chicken and salmon and vegetables for the week. But I made space.
  2. Cut the bananas into slices. Not too thick, but not too thin. Lay them on parchment paper on a baking sheet. Make sure that they are close, but not touching each other.
  3. De-shell the pistachios (or buy them without shells). Place pistachios into food processor and chop until they are chunky but not too powdery. Set aside.
  4. Place almond butter into microwave-safe bowl and microwave for 30-second increments. It took me about 45 seconds to achieve the consistency that I wanted. Yours may take more or less time, it's up to you.
  5. Drizzle melted almond butter over banana slices. Make it look Instagram-worthy.
  6. Sprinkle ground cinnamon on top of almond butter. Be careful not to dump the cinnamon on. That probably wouldn't taste too good.
  7. Sprinkle chopped pistachios on top of that.
  8. Place baking sheet in freezer for at least 30 minutes. Once bananas are frozen, slices can be transferred to a clean sheet or into a Tupperware.
  9. Enjoy! For real... because dieting sucks and this might be the closest thing to dessert you will get.

You may have noticed that I didn't put quantities of the ingredients. I'll be honest and say that I winged it. I had four ripe bananas to use, so I used enough of the other ingredients to make it look pretty (and delicious).
