Apple Oatmeal Raisin Cookie Recipe


It's definitely feeling like fall y'all. Time to start breaking out the blanket scarves, boots, and everything pumpkin spice. If you haven't already, get yourself to an apple orchard and pick yourself a heaping bag of apples. (If you're in Columbus, Lynd Fruit Farm is definitely my favorite.)

Once you've acquired a bag of apples, your first reaction might be "what the f- am I supposed to do with all of these apples?" (I know mine was.) You could make an apple pie, apple butter, apple crisp, apple tarts, caramel covered apples, the options are limitless.

In an effort to use things that I have in my pantry, I decided to make a basic oatmeal raisin cookie but added some apples. At first, I was worried about the texture, but I have no regrets because they turned out tasting amazing.

Of course I couldn't keep this recipe to myself, so here it is.

Ingredients you'll need:
  • 1 egg
  • ¼ cup milk
  • 1½ tsp vanilla
  • ¾ cup shortening
  • 1¼ cups brown sugar, firmly packed
  • 1 cup all-purpose flour
  • 1¼ tsp cinnamon
  • ½ tsp salt
  • ¼ tsp baking soda
  • ¼ tsp nutmeg
  • 3 cups quick oats, not instant or old-fashioned
  • 1 cup apple, peeled and chopped up into small chunks
  • ¾ cup raisins, if you want

Directions:
  1. Preheat oven to 375° and prepare cookie sheet as neccessary. (My cookie sheets don't need to be greased. I do lay down parchment paper, thought).
  2. In a large bowl, combine egg, milk, vanilla, shortening, brown sugar.
  3. Using an electric mixer, beat at medium speed until well blended.
  4. In a small bowl, combine flour, cinnamon, salt, baking soda, and nutmeg, until well mixed.
  5. Mix dry ingredients into creamed mixture at a low speed until just blended.
  6. Turn off mixer and hand-mix in oats and raisins.
  7. Drop rounded tablespoonfuls of dough mixture onto cookie sheet. Space about 2" apart.
  8. Bake for 13-15 minutes or until just golden brown.
  9. After you remove them from the oven, let them cool on the cookie sheet for 2 minutes and then move to a wire cooling rack to cool completely.
  10. Enjoy!

While they aren't the most gorgeous looking cookies, but they were definitely a hit with my coworkers and friends. I stored them in an air-tight container and continued to eat them for breakfast, after heating them up for 5-10 seconds in the microwave. Seriously, the best idea ever.

Good thing that I have more apples, I will definitely be making these again.

  3. These sound really delicious! I have tried to bake oatmeal cookies in the past and for some reason they always seem to come out dry and more like granola bars. I like the apples in this recipe, it might make the difference I need. I'll have to try these. Thanks!
